Pork Loin Topped with Apple & Papaya
Yields 4 portions recipe developed by The Clever Cleaver Brothers®
2 pound pork loin cut into 8 equal portions
Marinade
1/4 cup Cholula Hot Sauce
1/4 cup honey
4 cloves minced garlic
1 teaspoon grated ginger
1/2 lime, juiced
Salsa
1 cored red apple, 1/4’ dice
1 cored green apple, 1/4’ dice
1 cup papaya, 1/4’ dice
1/2 cup sweet onion, 1/4’ dice
1 tablespoon cilantro, rough cut
1 lime, juiced
1 dash Cholula Hot sauce
1. Portion pork loin and place in a plastic container with an airtight lid.
2. In a plastic bowl, combine the marinade ingredients. This step can be in advance and refrigerated until needed.
3. Pour marinade over pork loin and coat evenly. Cover and refrigerate for a minimum of 3 hours, or overnight.
4. In a large plastic container with an airtight lid, combine the salsa ingredients. This also can be made a day in advance.
5. Place the pork loin in a pre-heated to 350 degree oven. It is done when the interior temperature of the pork loin reaches 170 degrees or when pricked, the juices run clear.
6. When the pork is done, arrange on plates and top with the salsa.
